Bacon and Egg Spaghetti or Linguine Carbonara

This makes a great dinner with a nice salad but it also makes an excellent breakfast!

Ingredients

For 8 people ()

Recipe

  • 4 eggs, well beaten
  • 1/2 cup(s) grated parmesan cheese
  • 1 tablespoon(s) fresh chopped parshley, optional
  • 1 pound(s) bacon, cooked and crumbled
  • 1 Pkg or 1 lb linguine or spaghetti
  • 1/2 cup(s) butter

Bacon and Egg Spaghetti or Linguine Carbonara Directions

  1. Bring to a boil 4 quarts of water, add about a tablespoon of salt and toss in the pasta. Cook according to package directions, stirring frequently, about 5 minutes if using fresh pasta, about 10 minutes if using dried pasta.
  2. In a large skillet over medium heat, cook bacon until crisp. Remove from pan and drain on paper towels. Keep warm
  3. discard bacon fat, and be sure that every other element of your dinner is ready to go at this point. Then add butter to skillet you cooked bacon in, stir in cheese and stir constantly until combined. Reduce heat to low and add pasta, toss until coated with the butter mixture. Add eggs and continue tossing with 2 forks until eggs are cooked to you liking.
  4. Quickly remove to platter, arrange bacon, sprinkle with parsley and serve immediately.
  5. Now for what I really do!
  6. I use a full pound of bacon and cut it into pieces then cook until almost crisp. I reserve about half of the bacon grease in the pan (because bacon fat makes everything yummy!) I melt the butter into the bacon fat and the cheese. I toss in the pasta and the eggs and turn off the heat immediately because there is enough carry over heat to cook the eggs. Then I stir in all the bacon pieces so you get some in every bite.

  8. You can make up the recipe but add a couple more eggs. Stir is all together well in a bowl so that the eggs arent cooking. Then pour it all into a casserole dish and bake at 350 for about 30 minutes.
  9. When I make it this way my niece from Italy tells me it tastes just like her Mama's. Now that's a compliment!
