Hearty Ham and Bean Soup

This is great for tonight, great for using up some leftovers, great for freezing for later when you don't have time to cook

Ingredients

Recipe

  • 1 large onion, chopped
  • 1 cup(s) diced ham, cooked
  • 1 smoked ham hock or leftover ham bone
  • 1/2 teaspoon(s) paprika
  • 1 dash(es) cayenne pepper
  • 2 cans condensed chicken broth
  • 1 pound(s) dried lima beans
  • 1 can, 12 oz, whole peeled tomatoes, undrained
  • 1/4 cup(s) parsley, chopped

Hearty Ham and Bean Soup Directions

  1. Put beans in a colander or strainer and rinse thoroughly under cold water. Transfer beans to a large bowl or kettle add enough water to cover. cover container and soak over night. Or put beans in a large pan and cover with water, bring to a boil and simmer 30 minutes, remove from heat and cover. Let soak 1 hour
  2. Next day or 1 hour later depending on your method above, pour beans into colander and drain completely, discard liquid. Place beans in large pot and add ham hock or bone, undiluted chicken broth, undrained tomatoes, paprika, cayenne pepper and 3 cups water
  3. Put pan over high heat and bring water to a boil. Reduce heat to low, cover kettle, and simmer beans for 30 minutes. Meanwhile, finely chop celery and onions. Stir them into bean mixture. Cover and simmer 1 hour or until beans are soft and tender but not mushy. Remove ham hock or bone from beans. Let stand until cool enough to handle
  4. Using a sharp knife cut meat from bone. Discard bone, fat and skin. Cut meat into cubes and return to beans in kettle. Add chopped parsley and cubed ham. Reheat soup slowly, stirring frequently, serve
