Found this one and tried it for the first time last night and it was a hit

  • 1/2 cup(s) butter, softened
  • 1/2 cup(s) packed brown sugar
  • 1 1/2 teaspoon(s) cinnamon
  • 2 cup(s) sugar
  • 2 eggs
  • 1/4 cup(s) butter
  • 1/2 teaspoon(s) salt
  • 2 cup(s) flour
  • 1/2 teaspoon(s) vanilla
  • 1/2 cup(s) heavy whipping cream
  • 1/2 teaspoon(s) baking soda
  • 6 cup(s) chopped, peeled, tart apples
  • 1 teaspoon(s) nutmeg

Chunky Apple Cake Directions

  1. In a large mixing bowl, cream butter, sugar and vanilla. Add eggs, one at a time, beating well after each addition.
  2. combine the flour, cinnamon, nutmeg, salt and baking soda. Gradually add to creamed mixture and mix well, batter will be stiff. Add apples, chopped to 1/2 dice, and stir til well combined.
  3. Spread into greased 13x9 baking pan and bake at 350 for 40-45 minutes or until lightly browned and the top springs back when lightly touched. Cool for 30 minutes before serving
  4. Meanwhile, make the butterscotch sauce, in a small saucepan, combine brown sugar and butter. Cook over medium heat until butter is melted. Gradually add cream. Bring to a slow boil over medium heat, stirring constantly. Remove from heat. Serve with cake
  5. Yield 12-14 servings
  6. I made a couple changes when I made this. The batter was very thick so I added another 1/4 cup of melted butter and it smoothed out and looked much better. It didn't seem to make any difference to the baking time. 
  7. Also, I doubled the amounts for the butterscotch sauce. It is a heavenly addition to the cake and when added to the cake almost reminds me of an english pudding. So it is popular and the original amounts would not have gone far enough.
