
Apple Coffee Cake with Crumble Topping and Brown Sugar Glaze
Recipe is courtesy of Emeril Lagasse. I found it online and having many apples on hand decided to try something new. It's really good! It's quite a moist cake, almost pudding line and is good warm or cold.

- 1/2 cup(s) unsalted butter, softened
- 1 1/2 cup(s) packed light brown sugar
- 2 large eggs
- 2 cup(s) flour
- 1 teaspoon(s) baking soda
- 1 teaspoon(s) ground cinnamon
- 1/2 teaspoon(s) salt
- 1 cup(s) sour cream
- 1 teaspoon(s) vanilla
- 2 cup(s) cored and chopped apples
- 1/2 cup(s) packed light brown sugar
- 1/2 cup(s) flour
- 1/2 teaspoon(s) ground cinnamon
- 4 tablespoon(s) butter, softened
- 1/2 cup(s) light brown sugar
- 1/2 teaspoon(s) vanilla
- 2 tablespoon(s) water
Apple Coffee Cake with Crumble Topping and Brown Sugar Glaze Directions
- Preheat the oven to 350 degree F. Lightly grease a 13x9 baking dish with butter or baking spray like Pam.
- Ina a large bowl, cream together 1/2 cup butter and 1 1/2 cup brown sugar til light and fluffy. Add the eggs 1 at a time, beating after the addition of each. In a separate bowl, sift together the flour, baking soda, 1 tsp cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and 1 tsp vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out to the edges.
- To make the crumble topping, in a bowl, combine 1/2 cup brown sugar, 1/2 cup flour, 1/2 tsp cinnalmon and 4 tbl butter and mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown and set, 35-40 minutes. Remove from oven and let cool on a wire rack for at least 10 minutes
- To make the glaze, in a bowl, combine 1/2 cup brown sugar, 1/2 tsp vanilla and 2 tbl water and mix until smooth. Drizzle the cake with the glaze and let hardne slightly. Serve warm
