- 1 teaspoon(s) baking soda
- 3/4 cup(s) chopped walnuts, toasted
- 2 teaspoon(s) vanilla
- 3/4 teaspoon(s) baking powder
- 1 cup(s) Butter, softened
- 2 1/3 cup(s) flour
- 2 cup(s) flaked coconut
- 1 cup(s) packed brown sugar
- 1 teaspoon(s) salt
- 1 cup(s) old fashioned or quick cooking oats
- 2 eggs
Coconut Oat Cookies Directions
- Preheat oven to 375 degrees
- In a large bowl, cream butter and brown sugar until light and fluffy.
- Beat in eggs and vanilla
- In another bowl, whisk flour, salt, baking soda, and baking powder, radually beat into creamed mixture.
- Stir in coconut, oats and walnuts
- Drop by tablespoonfuls 2 inches apart onto ungreased baking sheets
- Bake 8-10 min or until light brown
- Remove from pans to cool
