Hearty Ham and Bean Soup
This is great for tonight, great for using up some leftovers, great for freezing for later when you don't have time to cook

1 pound(s) dried lima beans
1 smoked ham hock or leftover ham bone
2 cans condensed chicken broth
1 can, 12 oz, whole peeled tomatoes, undrained
1/2 teaspoon(s) paprika
1 dash(es) cayenne pepper
1 large onion, chopped
1/4 cup(s) parsley, chopped
1 cup(s) diced ham, cooked

Hearty Ham and Bean Soup Directions

  1. Put beans in a colander or strainer and rinse thoroughly under cold water. Transfer beans to a large bowl or kettle add enough water to cover. cover container and soak over night. Or put beans in a large pan and cover with water, bring to a boil and simmer 30 minutes, remove from heat and cover. Let soak 1 hour
  2. Next day or 1 hour later depending on your method above, pour beans into colander and drain completely, discard liquid. Place beans in large pot and add ham hock or bone, undiluted
