Ingredients

Recipe
- 1/2 teaspoon(s) dried basil
- 1/2 cup(s) milk
- 2 medium zucchini
- 1/8 teaspoon(s) pepper
- 1/3 cup(s) parmesan cheese
- 1 beaten egg
- 1 tablespoon(s) vegetable or olive oil
- 2 teaspoon(s) flour
- 1/3 cup(s) chopped onion
Stuffed Zucchini Directions
- Cut zucchini in half lengthwise, remove seeds. Place cut side down on a baking sheet and bake until tender. Or you can microwave until tender.
- Scoop out pulp, leaving a quarter inch shell. Finely chop zucchini and set it aside.
- cook onion in hot oil until tender, not browned. Add zucchini and cook for 1 minute. Stir in flour, basil and pepper. Add milk and stir until thickened and bubbly. Add egg and stir in parmesan cheese.
- spoon mixture into zucchini shells and place in a baking dish. Bake uncovered at 350 for 30 minutes or until lightly browned.
- You can substitute fresh basil for the dried basil but the it will affect the flavor and you need to use more than the recipe calls for.
