Peanut Butter Cookies
If you make these twice as big as usual and add a scoop of chocolate ice cream between 2 of them you have a perfect ice cream sandwich!

| ½ cup(s) butter |
| ½ cup(s) peanut butter |
| ½ cup(s) sugar |
| ½ cup(s) light brown sugar, packed |
| 1 egg |
| ¾ teaspoon(s) vanilla |
| 1 ¼ cup(s) flour |
| ¾ teaspoon(s) baking soda |
| ¼ teaspoon(s) salt |
Peanut Butter Cookies Directions
- Beat together, butter, peanut butter, sugars until light and fluffy.
- Add egg and vanilla, mix til well blended
- Combine flour, baking soda and salt, add to butter mixture and mix well.
- Roll dough into 1 inch balls, place about 2 inches apart on cookie sheet
- Bake 350 8-10 minutes
- Yield about 3 1/2 doz
