2 cup(s) sugar |
2 cup(s) grated zucchini |
1 tablespoon(s) vanilla |
3 cup(s) flour |
1 teaspoon(s) salt |
1 teaspoon(s) baking soda |

1/4 teaspoon(s) baking powder |
1/2 cup(s) chopped nuts |
1 cup(s) raisins |
Zucchini Bread Directions
- Combine eggs, oil and sugar, mix well.
- combine zucchini and vanilla and add to sugar mixture.
- combine dry ingredients and add to other mixture, mix well. Add nuts and raisins.
- Pour into 2 large or 3 small greased loaf pans
- Bake at 325 for 1 hour or until done.
- If you don't like raisins, leave them out!
- If you have an abundance of zucchini in the summer, peel it, take out the seeds, grate it and store it in 1 or 2 cup measures in a small zilock bag, and freeze it. When you're ready to use it
