3 eggs
1 cup(s) oil
2 cup(s) sugar
2 cup(s) grated zucchini
1 tablespoon(s) vanilla
3 cup(s) flour
1 teaspoon(s) salt
1 teaspoon(s) baking soda
1 tablespoon(s) cinnamon
1/4 teaspoon(s) baking powder
1/2 cup(s) chopped nuts
1 cup(s) raisins

Zucchini Bread Directions

  1. Combine eggs, oil and sugar, mix well.
  2. combine zucchini and vanilla and add to sugar mixture.
  3. combine dry ingredients and add to other mixture, mix well. Add nuts and raisins.
  4. Pour into 2 large or 3 small greased loaf pans
  5. Bake at 325 for 1 hour or until done.
  6. If you don't like raisins, leave them out!
  7. If you have an abundance of zucchini in the summer, peel it, take out the seeds, grate it and store it in 1 or 2 cup measures in a small zilock bag, and freeze it. When you're ready to use it
