This was a great hit at the family dinner and we all had to get the recipe. The left over salad can be used on sandwiches even! Such good flavor

3 large cucumbers, peeled, havled lengthwise, seeded, and cut into1/4 inch slices |
1 tablespoon(s) salt |
1/2 cup(s) sugar |
1/2 cup(s) rice wine vinegar |
2 jalapeno peppers, seeded and chopped fine |
1/4 cup(s) chopped cilantro |
1/2 cup(s) chopped peanuts |
1 tablespoon(s) finely chopped lemon grass, about 2 to 3 stalks |
6 scallions or green onions, cut on diagonal |
1 teaspoon(s) curry |
1 cove garlic, finely chopped |
Thai Cucumber Salad - Shay Directions
- Toss the cucumbers with the salt in a colander, and leave in the sink to drain for 30 minutes. Rinse with cold water, then drain and pat dry with paper towels.
- Whick together the sugar and vinegar in a mxing bowl til the sugar has dissolved. Add jalapeno peppers, cilantro, lemon grass, scallions, curry and garlic, toss to combine.
- Mix in cucumber right before serving. If you put them in any sooner they will get soft. Then sprinkle nuts on top. You can serve the nuts on the side if anyone has a
