1 lg ripe banana
1 lg egg
1/2 cup(s) peanut butter
1/3 cup(s) unsweetened cocoa
3 tablespoon(s) honey
1 tablespoon(s) vanilla
1/4 teaspoon(s) baking soda
1 pinch of salt
1/2 cup(s) heaping, mini chocolate chips, semi sweet or others if you choose, plus more for sprinkling over the tops of the muffins

Double Chocolate Mini Muffins - flourless Directions

  1. Preheat oven to 400
  2. Spray mini muffin pan well with pam
  3. To a blender add everything except the chocolate chips. Blend on high til smooth and creamy
  4. Add chocochips and stir by hand so you don't crush the chips
  5. Using a Tablespoon or small cookie scoop drop rounded spoons into prepared pans. Each cavity should be filled 3/4 full
  6. Sprinkle tops of muffins with a few more chocochips
  7. Bake for 8-10 or until tops are domed and springy to the touch and a toothpick inserted into the center comes out
