1/2 cup(s) butter, softened
1/2 cup(s) sugar
1/4 teaspoon(s) baking soda
1/4 cup(s) lemon juice
2 eggs, seperated
1 cup(s) flour
1 teaspoon(s) baking powder

Lemon Muffins Directions

  1. cream butter and sugar, til smooth, stir in egg yolk, beat until light
  2. Mix flour, baking powder, and baking soda, add to butter mixture, alternating with the lemon juice.
  3. Beat egg whites till stiff, fold into muffin mixture until well blended.
  4. Put into buttered or lined muffin pans about 2/3 full. Bake at 350 for 20-25 minutes.
