1/2 cup(s) sugar |
1/4 teaspoon(s) baking soda |
1/4 cup(s) lemon juice |
2 eggs, seperated |
1 cup(s) flour |
1 teaspoon(s) baking powder |
Lemon Muffins Directions
- cream butter and sugar, til smooth, stir in egg yolk, beat until light
- Mix flour, baking powder, and baking soda, add to butter mixture, alternating with the lemon juice.
- Beat egg whites till stiff, fold into muffin mixture until well blended.
- Put into buttered or lined muffin pans about 2/3 full. Bake at 350 for 20-25 minutes.
- Yields 8-10 muffins
