2 1/2 cup(s) flour
1 1/3 cup(s) sugar
3 eggs
1 teaspoon(s) almond extract or vanilla
1/2 cup(s) oil
2 teaspoon(s) cinnamon
1 teaspoon(s) baking soda
1/2 teaspoon(s) cloves
1/2 cup(s) orange juice
2 teaspoon(s) baking powder
1 teaspoon(s) salt
1 cup(s) brown sugar
1/2 cup(s) butter
1 teaspoon(s) vanilla
1/4 cup(s) milk
2 cup(s) powedered sugar

Zucchini Cupcakes - Grandma Hardy Directions

  1. Beat eggs, sugar, oil and orange juice and extract. Combine dry ingredients, add to egg mixture and mix well. Add zucchini and mix well
  2. Bake at 350 about 20-25 minutes or until cupcakes spring back when pressed lightly, cool completely
  3. For frosting: combine brown sugar, butter and milk in a saucepan, bring to a boil over medium heat. Cook and stir for 2 minutes. Remove from heat, stir in vanilla. Cool to lukewarm. Gradually beat in powdered sugar until it reaches spreading
