Fluffy Boiled Icing
This is also known as 7 minute icing. I used this for my sons wedding on cupcakes. It has an almost marshmallow consistency and stores very well. Really nice glossy finish.

1 1/2 cup(s) sugar
2/3 cup(s) water
1/8 teaspoon(s) cream of tartar
3 egg whites
1 pinch(es) salt
1 teaspoon(s) vanilla

Fluffy Boiled Icing Directions

  1. I heavy saucepan combine sugar, water and cream of tartar. Slowly bring mixture to a boil, stirring sides of the saucepan with a brush dipped in water to remove any sugar crystals. Cover and boil for about 3 minutes or until a candy thermometer reads 245 degrees or soft ball.
  2. Beat egg whites with a pinch of salt until glossy and peaked. Slowly pour in syrup as you continue to beat the whites. Beat until cool and frosting is soft and fluffy, fold in vanilla
  3. Yield enough to frost a 2 layer 9 inch
