Fluffy Boiled Icing
This is also known as 7 minute icing. I used this for my sons wedding on cupcakes. It has an almost marshmallow consistency and stores very well. Really nice glossy finish.

2/3 cup(s) water |
1/8 teaspoon(s) cream of tartar |

Fluffy Boiled Icing Directions
- I heavy saucepan combine sugar, water and cream of tartar. Slowly bring mixture to a boil, stirring sides of the saucepan with a brush dipped in water to remove any sugar crystals. Cover and boil for about 3 minutes or until a candy thermometer reads 245 degrees or soft ball.
- Beat egg whites with a pinch of salt until glossy and peaked. Slowly pour in syrup as you continue to beat the whites. Beat until cool and frosting is soft and fluffy, fold in vanilla
- Yield enough to frost a 2 layer 9 inch
