Beef Enchiladas - Grandma Hardy

1 pound(s) ground beef
1 can chopped olives, drained
1 cup(s) cottage cheese
2 tablespoon(s) parsley, chopped
1/2 teaspoon(s) garlic powder
1/2 teaspoon(s) salt
1/4 teaspoon(s) pepper
8 flour tortillas
1 medium onion, chopped
1/2 green pepper, chopped
15 ounce(s) can tomato sauce
1 tablespoon(s) oil
4 ounce(s) can chopped green chilies
2 teaspoon(s) chili powder
1 teaspoon(s) sugar
1 drop(s) shredded cheddar cheese
1/2 teaspoon(s) garlic powder

Beef Enchiladas - Grandma Hardy Directions

  1. In a skillet, brown the beef, drain the fat. Combine beef with cottage cheese, olives, parsley, garlic powder, salt and pepper. Place about 1/3 cup filling on each tortilla, roll up. Place tortillas, seam side down, in an ungreased 13x9 baking dish.
  2. For sauce; saute the onion and green pepper in oil til tender. Add tomato sauce, green chilies, chili powder, sugar and garlick powder. Pour over tortillas.
  3. Cover and bake at 350 for 30 minutes. Sprinkle with cheese and return to the oven for 5
