1 pound(s) sausage
1 medium white onion, diced
3 cloves garlic, minced
1 red pepper, diced
6 eggs
1/3 cup(s) milk
20 ounce(s) bag of frozen hash browns, thawed
2 cup(s) shredded cheddar or mozzarella cheese
1/4 teaspoon(s) pepper

Breakfast Casserole with sausage hashbrowns and eggs Directions

  1. Heat oven to 350
  2. In a pan, cook the sausage, crumbling with spoon. Remove from pan keeping about 1 tbls of grease in the pan and discard the rest
  3. Add onion and red pepper to pan and saute for 5 min, add garlic and cook til it smells good - add to the sausage
  4. Add the hash browns and 1 1/2 C cheese to the sausage and stir to combine
  5. In a separate bowl, whisk together the eggs, milk and black pepper til combined. Add to the hash brown mixture and stir to combine
  6. Pour into a 9x13 baking dish
