2 eggs, beaten
3/4 cup(s) soft bread crumbs
1/2 cup(s) tomato juice
1/2 teaspoon(s) minced garlic
1/4 teaspoon(s) salt and pepper
1/2 teaspoon(s) oregano
2 tablespoon(s) parsley flakes
2 1/2 pound(s) ground beef
8 slices ham

Sicilian Meat Loaf Directions

  1. Mix together all but the ham and cheese until just combined.
  2. On plastic wrap spread beef mixture out until roughly 9x12 and 1/2 inch thick. Place ham and cheese on top leaving an inch border.
  3. Using the plastic wrap to help you roll the meat into a roll and seal up the ends and edges by pressing with your fingers. Place on a baking sheet and bake at 350 for 1 hour
