3 pound(s) chicken parts, legs, wings breast, thighs, your choice |
1/3 cup(s) flour |
1 teaspoon(s) marjoram, dried |
1/4 cup(s) butter |
2 medium onions, sliced |
1 cup(s) celery, chopped |
6 large carrots, pared and halved |
1 bay leaf |
4 whole cloves |
9 whole black peppers |
1 can (13 oz) chicken broth |
2 teaspoon(s) snipped chivessor chopped parsley |
1 egg |
1/4 cup(s) milk |
1/2 cup(s) light cream |
Chicken Fricassee with Dumplings Directions
- Wash chicken, dry with paper towels. If legs and thighs are large cut apart. Dredge chicken in a mixture of the flour, salt and marjoram, coating evenly, shake off excess. Reserve leftover flour.
- In 2 tblspns hot butter in 6 quart dutch oven, saute chicken, fout pieces at a time, skin side down, turning with tongs, until lightly browned all over, about 15 minutes. Lift out with tongs. Continue browning the chicken, adding butter as needed.
- To drippings, add onion, celery, carrots, bay leaf
