1 refreigerated pie crust
1/4 cup(s) corn starch
3 tablespoon(s) flour
1 3/4 cup(s) sugar
1/8 teaspoon(s) salt
4 egg yolks, slightly beaten
1/2 cup(s) lemon juice
1 tablespoon(s) grated lemon peel
1 tablespoon(s) butter
4 egg whites
1/4 teaspoon(s) cream of tartar
1/2 cup(s) sugar

Lemon Meringue Pie Directions

  1. Fit pie crust into a 9 inch pie plate. Crimp edges to look pretty. Refiegerate 1/2 hour to let rest. Prick entire surface evenly with fork. Bake 8 to 10 minutes or until golden brown. Cool on a rack
  2. To make filling: In medium saucepan, combine cornstarch, flour, 1 3/4 cups sugar and the salt, mixing well. Gradually add 2 cups water, stirring until smooth. Over medium heat, bring to boiling, stirring occasionally; boil?1 minute, til shiny and translucent.
