1/4 cup(s) olive oil
2 tablespoon(s) lemon juice
1 1/2 teaspoon(s) minced garlic
1 tablespoon(s) chopped fresh oregano
1 teaspoon(s) red pepper flakes
1 zest of lemon, grated
6 boneless skinless chicken thighs, cut in 1 1/2 inch chunks
2 cup(s) plain yogurt
2 tablespoon(s) chopped fresh parsley
2 tablespoon(s) chopped fresh mint
1 tablespoon(s) lemon juice

Lemon Oregano Chicken Shish Kebabs with Tzatziki Directions

  1. Fire up the grill for meduimhot direct heat.
  2. Combine olive oil, lemon juice, garlic, oregano, red pepper flakes and lemon zest ina a nonreactive pan. Add chicken and marinate in the fridge for about 45 minutes
  3. Meanwhile, prepare the Tzatziki: Peel and seed cucumber and but into small dice. In a bowl, combine cucumber, yogurt, parsley, mint and lemon juice. Season to taste with salt and pepper, set aside, covered and refridgerate
