2 cup(s) shredded zucchini
2 cup(s) sugar
1 teaspoon(s) salt
1/2 teaspoon(s) baking soda
4 eggs
1/2 cup(s) chopped nuts
3 ounce(s) cream cheese
1 tablespoon(s) milk
2 cup(s) powdered sugar
1/2 cup(s) butter
1 teaspoon(s) vanilla
2 1/2 cup(s) flour
1 1/2 teaspoon(s) cinnamon

Zucchini Cake - Grandma Hardy Directions

  1. Combine flour, sugar, cinnamon, salt, baking powder and baking soda. combine oil and eggs and add to dry ingredients and mix well. Add zucchini, stir until combined. Fold in nuts if desired.
  2. Pour into a greased 13x9 pan. Bake at 350 for 35-40 minutes or until toothpick inserted in center comes out clean. Cool
  3. For frosting: beat cream cheese, better, milk and vanilla til smooth. Add powdered sugar and mix well. Frost cake
  4. Store in fridge
