Caramel Nut Roll - Twila Pulsipher Directions
- Part 1 - Combine 3 cups sugar, 1 1/3 cup cornstarch and 1 cup water in a 3 quart pan over medium heat. Stir til dissolved, cook to 236 Degrees on candy thermometer.
- Beat 2 egg whites til stiff. Pour syrup into egg whites very slowly, beating with mixer constantly until fairly cool, do this in a large bowl
- Part 2 - In saucepan, combine 2 1/4 cups sugar, 3/4 cup water, 2/3 cup corn syrup, stir to dissolve and then cook to 250 degrees.
- With mixer going, slowly pour part 2 into the center of part
